The first overarching question I like to ask Wedding Clients is: “What is your vision for the Wedding?”.  Guest count, budget, venue, etc are all very necessary questions, but ultimately the only way we will all be on the same page is if Brides and Grooms (yes guys do matter in these things) share what they want the day to look like.

Do you want a Casual Wedding on a Budget?  If so, our services will be very different than a Black Tie wedding.  Hors d’Oeuvres are always a good idea because the Bridal Party needs time to take pictures.  In this hour or so people will naturally want to grab a drink and some food.  But maybe instead of Passed Hors d’Oeuvres, you could do one or two Stationary Cold Display.  Perhaps some Cheese, Crackers, and Crudite.  This will fill up your guests enough so they aren’t gnawing off their own arms, and not make the Bridal Party rush.  For dinner you might want to go with Package #3 of BBQ Chicken and Pulled Pork.  For sides you could do real Comfort Food like Mac n Cheese and Corn on the Cob.  For dessert instead of an elaborate cake you can go with an Ice Cream Social.  Everyone will be relaxed, full, and happy.

Do you want Casual Food but an Elegant feel?  Well this will change some things.  First off I GREATLY suggest our Contour Linens.  This gives any party a Unique, Contemporary look.  Next I would go with the Upscale Disposable Dinnerware.  It isn’t very expensive, but it gives the look and feel of real china without the cost.  For the food I would go with Passed Hors d’Oeuvres, but not necessarily the old standard Stuffed Mushrooms and Scallops wrapped in Bacon.  You could instead try Pulled Pork on a Sweet Potato Biscuit or Buffalo Chicken Salad in a Phyllo Cup.  Nothing crazy or too far out there, but a nicer spin on classics.  For the main course you could do with Package #2.  The Salmon covers the non meat eaters (or healthier crowd).  Chicken covers the basic group.  And Steak Tips cover the Manly Men who want Meat.  For dessert finish it off with a Homemade Pie Station.  The reception will be Elegant enough for your snooty Aunt Betsy, but the food will be relaxed enough for your Papa Frank.  And you’ll love it all ;).  Win Win Win.

Do you want Fine Food with an Elegant feel?  Can Smokey’s still do that???  Of course we can!  Contour Linens will be a Must.  You are gunna need China.  You can’t forget the Passed Champagne Toast.  We should probably do Place Settings as well.  For Stations you could go with a Mediterranean Display and a Raw Bar.  Passed Hors d’Oeuvres could do Martini Shrimp Cocktail, Beef Tenderloin Crostini, Sesame Chicken Lollipops, and Bourbon Apple Bacon Tartlettes.  For the Main Course you can try the Black Jack Encrusted Beef Tenderloin, Spinach and Goat Cheese filled Chicken Roulades, Herb Crusted Salmon, and a Quinoa Bake for the Vegetarians.  For dessert we can Pass your Wedding Cake and serve Coffee table to table.  Your guests will feel pampered and RAVE about the food.

So really we can go in many directions, and not all of it is based on your budget.  A good chunk depends on what you WANT for the day.  We can handle everything for you (Food, Bar, Rentals), but we want to all be on the same page so YOUR day is just right.

As our BBQ Season winds down we get people calling us and saying, “Geez, I wish I had done a BBQ this year” or “Too bad it’s too late for a Cookout”.  Well I am here to tell you, That’s Nonsense.  It isn’t too late at all!

Truth of the Matter is that we just did 8 parties in the first 5 days of October.  October!!!  Below is a picture from October 5th

For this event it was COLD when we arrived at 8AM.  In fact it was in the 40’s.  But by the time of the event it had warmed up to the 60’s.  Folks came from their heated building, grabbed their food outside, conversed, grabbed more food, and by the time they started to feel the chill in the air – they were inside.  This beats an Italian Lunch or Cold Sandwiches ANY DAY.  Employees were happy.  The party planner was a rockstar.  But then again, that is just another day for us.

What happens if it rains?  I get this question a lot.  The simple answer is: We work rain or shine, inside of out.  Some people feel that they have to cancel the event if it rains (or even before based on weather forecasts).  But we can work around anything.

Just last week we had a series of events on Friday.  One event in particular was in Massachusetts and was to be held in a grassy area by the company.  Unfortunately, the skies opened up and it rained for a good chunk of the day.  Since there was no tent, and they had about 200 guests, it would have to be moved inside.  No worries, we had them covered.  We are very flexible, so as long as it is within reason, we will be happy to do it.  The whole party; food, bars… everything, was simply moved inside.  And how did it go you ask?  Well, why not take it from the client directly:

I wanted to write and ask for a final invoice please. I also wanted to tell you how amazing your BBQ team was on the day of our event! I could not be more happier with how well everything went even with all of the weather complications! Rose is my new favorite person. I will spread the word to all of my office manager friends in the area, yelp, and anyone else who will listen. I hope we can work together again very soon!! 🙂

Gotta start somewhere with a Blog… so I figure this email is a good space to start.  Last weekend, like virtually all weekends, we had a couple BBQ/Clambakes Weddings.  Now at Smokey’s we pride ourselves on our Food and Service for all events.  But Weddings are a little extra special.  It is a once in a lifetime event that you want to make sure goes as well as humanly possible.  So we are always to happy to hear from the wedding party that we did a great job 🙂 .  Here is an email we received the following Monday.  It is notes like this that make it all worthwhile
